Easy Sausage or Chicken Risotto

2 Tbsp olive oil
1 cup onion, chopped
1/2 lb sausage, skin removed, or cubed chicken breast (or soy sausage)
1.5 cups arborio rice
1/2 cup white wine
1 can (14.5oz) beef broth (or chicken broth)
1 jar (16oz) marinara sauce
2 cups water
1 cup frozen peas
1/4 tsp each salt and pepper
1 cup shredded parmesan cheese
1/4 cup shredded fresh basil

Heat oven to 350*. In a cast iron skillet heat olive oil over medium high heat. Add onion and meat. Saute 6 minutes. Add rice; cook 1 minute. Add wine; cook 1 minute. Add broth, marinara sauce, water, peas, salt and pepper. Bring to a simmer. Cover. Bake at 350* for 20 minutes. To serve, stir in parmesan cheese and fresh basil.
