1 can (15oz) each black beans and white beans (cannellini), rinsed and drained
1 large egg or 2 egg white
1/2 yellow onion and 1/2 green pepper chopped
1/2 cup frozen corn, thawed (optional)
1 small sweet potato, cooked, mashed (optional)
1 cup whole wheat bread crumbs
1 tsp each dried oregano, basil and fresh parsley
2 cloves fresh garlic, minced
salt and pepper to taste
hot sauce to taste
BBQ sauce to taste
- Place beans in a large bowl and mash well with a fork or use a food processor.
- Add egg, onion, pepper, (sweet potato and corn) bread crumbs, oregano, basil, garlic, salt, pepper, tomatoes and hot sauce or BBQ sauce. Mix well and shape into patties
- Heat 1 tbsp oil in large skillet over medium heat. Cook Patties on each side for approximately 5 minutes to a golden brown.
- Serve in a pita, flat bread, or small whole wheat bun with dark greens, avocado, alfalfa sprouts, grilled pineapple or cheese.
