Black and White Veggie Burger

Veggie Burger

1 can (15oz) each black beans and white beans (cannellini), rinsed and drained
1 large egg or 2 egg white
1/2 yellow onion and 1/2 green pepper chopped
1/2 cup frozen corn, thawed (optional)
1 small sweet potato, cooked, mashed (optional)
1 cup whole wheat bread crumbs
1 tsp each dried oregano, basil and fresh parsley
2 cloves fresh garlic, minced
salt and pepper to taste
hot sauce to taste
BBQ sauce to taste


  1. Place beans in a large bowl and mash well with a fork or use a food processor.
  2. Add egg, onion, pepper, (sweet potato and corn) bread crumbs, oregano, basil, garlic, salt, pepper, tomatoes and hot sauce or BBQ sauce. Mix well and shape into patties
  3. Heat 1 tbsp oil in large skillet over medium heat. Cook Patties on each side for approximately 5 minutes to a golden brown.
  4. Serve in a pita, flat bread, or small whole wheat bun with dark greens, avocado, alfalfa sprouts, grilled pineapple or cheese.
