2 Tbsp olive oil
1 cup chopped onion
3 cloves diced garlic
2 cans (14.5 oz each) vegetable broth
1 jar (16oz) marinara sauce
1 can (15oz) kidney beans, drained and rinsed
3 ribs celery, sliced
1 box (10oz) frozen mixed vegetables
1 cup ditalini pasta
grated Parmesan cheese
- In large non stick pot heat olive oil over medium-high heat. Add onion and garlic, cook for 3 minutes.
- Add vegetable broth, marinara sauce, beans, celery, and frozen vegetables. Bring to a boil.
- Add pasta and cook, covered, with lid slightly ajar for 10 minutes, stirring occasionally. Serve immediately with Parmesan cheese. Garnish with basil.
