Jewish Apple Cake

2 (or more) apples
2 Tbsp sugar
3 tsp cinnamon
1/2 tsp salt
4 eggs
2 cups sugar
3 cups flour
1 cup oil
4 tsp baking powder
2 1/2 tsp vanilla
1/2 cup orange juice


1. Peel, core and slice apples. Mix together 2 Tbsp sugar, cinnamon, and salt. Combine with apples in mixing bowl, let sit for 20 minutes.
2. Preheat oven to 350* and grease a bundt pan. In large mixing bowl combine eggs, sugar, flour, oil, baking powder, vanilla and orange juice.
3. Pour 1/3 batter into bundt pan. Add 1/2 the apple mixture. repeat with rest of batter and apple mixture. Drizzle leftover apple juice/sugar mixture on top
4. Bake at 350* for 1 hour. Let cool, then invert onto serving plate.
