Sweet Potato Pie

1 lb sweet potato
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 evaporated milk
2 eggs
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1 tsp vanilla extract
1 Tbsp Lemon Juice
2-3 Tbsp Flour
1 9-inch unbaked pie crust


1. Boil sweet potato whole in skin for 40-50 minutes or until done. Run cold water over the potato and remove the skin
2. Break apart sweet potato in a mixing bowl. Add butter and beat with hand mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon, lemon juice, and vanilla. Beat on medium speed until mixture is smooth. Add in flour to thicken. Pour filling into an unbaked pie crust.
3. Bake at 350* for 55-60 minutes or until knife inserted in center comes out clean. Pie will puff up like a souffle, then will sink down as it cools.
