Onion and Apple Open-Face Sandwich

Onion Apple Tart


2 Tbsp olive oil
1/2 medium onion
2 Tbsp butter or margarine
1 apple (pink lady, fuji, honeycrisp, granny smith)
2 slices rosemary sourdough bread
2 Tbsp herbed goat cheese
4 slices havarti cheese


  1. In medium skillet, heat oil over medium-high heat. Slice onion into thin strips. Add onions to skillet and cook (stirring occasionally) until golden and caramelized, about 7 minutes. Remove to plate. Keep skillet warm.
  2. Slice apple into 1/8″ slices, then dice into smaller squares. Melt butter in skillet. Toss in apples and cook until light brown and slightly soft, about 6 minutes. Remove to plate.
  3. Using a broiler and a baking sheet, toast bread slices to slightly crispy on either side. Remove from oven and spread 1 tbsp of goat cheese on each slice.
  4. Top each slice of bread with 1/2 the onions, 1/2 the apples, and 2 slices of havarti. Return pan to broiler, and watch until cheese on top is melted, 1-2 minutes. Enjoy!
