1/2 cup onion, chopped
1 Tbsp butter
2 tsp minced garlic
3 chipotle chilis (canned in adobo sauce) seeded, diced
4oz cream cheese
1/2 cup milk
2 10oz pkgs frozen chopped spinach, thawed, drained
1/4 cup parmesan cheese
2 Tbsp sour cream
salt and pepper to taste
- In a sauce pan heat butter over medium heat. Add onion, garlic and chilis. Cook until onions are soft.
- Add cream cheese and milk, stir until melted.
- Stir in spinach. Stir over medium-low heat until heated through, 4-6 minutes.
- Stir in parmesan and sour cream. Season with salt and pepper and serve.
