This recipe is so easy and colorful!
4 Tbsp Olive Oil, divided
1/2 onion, chopped
1 stalk celery, chopped
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
1 pink lady apple (or granny smith), chopped
1 handful fresh spinach, stems removed
6oz soy chorizo (Trader Joe’s 12oz pkg)
1 cup cooked white rice
Feta Cheese (optional)
salt and pepper to taste
- In a large skillet, heat 2 Tbsp oil over medium high heat. Add onion, celery, peppers, and apple. Cook until sightly tender, but still a little crunchy, about 5 minutes. Season with Salt and pepper. Pour mixture into a serving dish, set aside.
- Return skillet to heat and add remaining oil. Add in chorizo and break it up with a spatula or wooden spoon. Mix in rice and cook for 2 minutes, Add in spinach leaves and sauté just until wilted.
- Add chorizo mixture to veggie mixture in serving dish. Top with a sprinkle of Feta cheese and serve.
