Buffalo Quinoa Bites


2 Tbsp butter, melted
2 Tbsp olive oil
1/4 cup hot sauce (Frank’s buffalo sauce is great)
1/2 tsp salt
2 cups cooked quinoa
1 cup cannellini beans, mashed
1/2 cup panko bread crumbs
1 large egg, lightly beaten
1/2 tsp salt
1 tsp pepper
3 Tbsp olive oil


  1. Make the buffalo sauce: Combine the butter, olive oil, hot sauce and salt in a medium size bowl. Whisk to combine and set aside
  2. In separate bowl combine the quinoa, mashed cannellini beans, bread crumbs, egg, salt, pepper and 4 Tbsp of the buffalo sauce. Mix until well combined.
  3. Form mixture into 35-40 equal size balls (about 1 Tbsp of the quinoa mixture). Form the balls tightly with your hands.
  4. Heat olive oil in a large skillet over medium-high heat. Add 10-15 balls at a time and cook until golden and crisp on all sides, about 5 minutes. Remove balls from skillet and very gently toss them with the buffalo sauce. Repeat with remaining balls.
  5. Serve as an appetizer with ranch or blue cheese dressing or on top of a salad for lunch or dinner.
